Getting Ahead in the Kitchen

Now that the boys are back, and life is definitely in full swing I am so glad that I spent some time in the kitchen last week in order to stock our freezer.  Seeing the fruit from that time gives me more motivation to keep it going and to go ahead and tackle a few projects that I didn't quite get to.

I never really reported back on the progress from last week, so I thought I'd post a little update.  You will likely be seeing some of the recipes for these items in the near future.

Here is what I added to our freezer:
1 tray of basil pesto
36 frozen fruit cups
20 breakfast casserole biscuits
4 servings of spinach, cheese, and rice casserole
20 southwest roll-ups
2 big bags of meatballs, precooked
10 hamburger patties
1 chicken and bowtie casserole
3 pints of chicken broth
1 bag of cooked, shredded chicken
4 small bags of black beans

I have since kept the work going by adding these things:
1 bag of mashed potatoes
4 small bags of pulled pork roast
a big batch of homemade instant oatmeal (this works surprisingly well!)

I am hoping to keep the momentum going by cooking a whole turkey tomorrow as well as baking some muffins.  I'll let you all know how that goes!
