We just returned home on Saturday from lots of traveling and time away. I was able to accomplish a good amount of decluttering and reorganizing before we left, and I am feeling the need to simplify things in general around here. In an effort to just stay home more and to clean our pantry and freezers (as well as save a bit of $$), I have instituted another pantry challenge for the month of July.
Since we have found ourselves dipping into our July budget already (hence the need to save some $$), the challenge is already in full swing at our house. I made this week's menu plan based on meats that I knew we already had in the freezer, and I plan to work on collecting a master list of recipes to help with meal planning in general.
I plan from Monday to Sunday, and here is the menu for this week:
Monday - Hot and Spicy peanut chicken, rice (This is a new crock pot meal that was prepared and frozen right before we left.)
Tuesday - left-overs (It's just Benjamin and me.)
Wednesday - beans and weenies (Don't ask me why everyone in my house loves this so much. Hey, at least it's cheap and easy.)
Thursday - chipotle shrimp, sweet corn on the cob, veggies
Friday - pizza bites
Saturday - rosemary pork loin, mashed potatoes, steamed broccoli
Sunday - slow-cooker apricot chicken, rice, veggies
breakfasts - cereal, granola bars/cereal bars, yogurt with fruit, muffins, eggs
lunches - salads, sandwiches/wraps, quesadillas, snacky stuff, left-overs
